Post-harvest firmness
Post-harvest firmness refers to the ability of fruit to retain its firmness after harvest. It depends on the variety, degree of ripeness, cell turgor, tissue cohesion, changes in cell walls, and cuticle properties, as well as storage conditions. High post-harvest firmness facilitates transport and extends the storage life of tomatoes.
