Firmness

Firmness refers to the degree of hardness and elasticity of a tomato’s flesh. It is a varietal trait, but it is also influenced by growing conditions, hydration, and the fruit’s degree of ripeness. Tomatoes with high firmness tolerate transport and storage better, while very soft fruits typically have a shorter shelf life. High firmness does not always mean inferior flavor.
