Fruit Color

The color of a tomato depends on its content of natural pigments, primarily lycopene, beta-carotene, chlorophyll, and anthocyanins. Depending on their varying proportions, the fruits can be red, pink, yellow, orange, green, white, brown, purple, or nearly black. Color is primarily a varietal trait, although the intensity of the color is also influenced by temperature and the amount of light during ripening. It’s worth remembering that the color of the fruit does not determine its flavor—red, green, and yellow varieties can all be delicious.
