Beta-carotene

Beta-carotene is a natural pigment from the carotenoid group that gives many tomato varieties their yellow and orange color. It is a precursor to vitamin A and, like lycopene, has antioxidant properties. Its content depends primarily on the variety and the degree of ripeness of the fruit. Varieties rich in beta-carotene often have intensely orange flesh, but its color does not determine the sweetness or flavor of the fruit.
