Lycopene
Lycopene is a natural pigment in the carotenoid group that gives most tomatoes their red color and has antioxidant properties. Its content depends on the variety, degree of ripeness, and growing conditions, and is typically high in intensely red, ripe fruits. Pulp and heating can increase its bioavailability by releasing it from the tissues; however, excessive processing, exposure to oxygen, and improper storage can lead to losses. Bioavailability also depends on the composition of the entire meal.
