Anthocyanins

Anthocyanins are natural plant pigments belonging to the flavonoid group. They are responsible for the purple, navy blue, and nearly black coloring of tomato skins, characteristic of varieties such as Blue, Indigo, and many modern heirloom varieties. Their concentration increases under strong sunlight and lower nighttime temperatures. Anthocyanins exhibit strong antioxidant properties and are valued for their potentially beneficial effects on human health. In most varieties, they are found primarily in the fruit’s skin.
