Fruit Storage

Also known as: Post-harvest ripening of tomatoes

Fruit aging is the period during which tomatoes are stored after harvest, allowing them to continue ripening or stabilize their flavor. Tomatoes harvested at physiological maturity can ripen off the plant due to the action of ethylene. However, fruits that ripen on the plant achieve the best flavor. Healthy, undamaged tomatoes stored at room temperature are best suited for aging.
