Physiological maturity
Physiological maturity is the stage of development at which the fruit has finished growing and nasiona have reached full germination capacity. This does not yet mean full consumption maturity—the fruit may still be green or just beginning to change color. It is at this stage that the tomato is capable of continuing to ripen after harvest. When collecting your own seeds, it is best to select fruits that have reached not only physiological maturity but also full eating maturity.
