Absinthe
is an attractive, tall-growing variety that belongs to the group of green beefsteak tomatoes. The fruits of this variety weigh between 400 and 600 grams, and their skin is a deep green, with a slight orange blush as they ripen. The flesh is a vibrant green and has a refreshing, sweet-and-sour flavor reminiscent of heirloom tomato varieties. The “Absinthe” tomato is perfect for eating raw, especially in salads and on sandwiches.
The plant is very productive, and its tall bush requires staking and tying up. It is perfectly suited for growing both in the ground and under cover. The growing season for this variety is approximately 80 days.

Absinthe was developed by American breeder Alan Bishop. It belongs to the category of tomatoes that remain green after ripening—it’s best to judge its ripeness by a slight change in color and the flesh yielding to gentle pressure, rather than waiting for it to turn red.
