The Persimmon variety is a classic yellow-orange beefsteak tomato that is highly regarded for both its appearance and taste. The fruit is large, often weighing 400 to 900 grams, and its flesh is fleshy, juicy and aromatic, but importantly, not watery. The skin has a characteristic persimmon (orange-yellow) color with delicate, pink discolorations.
Persimmon is valued for its exceptionally sweet, fruity flavor, which many consider to be one of the best among orange-colored tomatoes. Thanks to its small number of seeds and compact consistency, it is perfect for salads, sandwiches, and preserves. The plant is tall, indeterminate, requires tying and support. Tomatoes of this variety ripen after about 79-90 days from planting, which makes it medium late.
This is a heirloom variety, known from growing in Thomas Jefferson's garden as early as 1781. Thanks to its resistance and productivity, it also works well in colder climates.
