Thickness of the peel

Peel thickness is a varietal trait that affects fruit shelf life, resistance to cracking, and eating comfort. Thin-skinned varieties are often prized for their more delicate texture and better flavor, while thicker skin improves postharvest shelf life and resistance to damage during transport. Skin thickness alone does not determine the quality of a tomato.
