Epidermis

Also known as: plant bark

The epidermis is the outer layer of cells covering the leaves, stems, and fruits of the tomato plant. It protects the plant from excessive water loss, mechanical damage, and the entry of pathogens. Its surface features a cuticle that limits transpiration and stomata responsible for gas exchange. The condition of the epidermis affects, among other things, the fruit’s resistance to cracking and the plant’s shelf life.
