Harvesting involves regularly removing ripe fruit from the plants. It reduces the risk of cracking, overripening, rotting, and losses caused by weather or pests, but it does not in itself trigger the ripening of the remaining tomatoes. This process depends primarily on the fruit’s physiological maturity, temperature, ethylene levels, and the characteristics of the variety. It is best to harvest the fruit in the morning or evening, avoiding the hottest part of the day.
