Varsovia is distinguished by its deep, purplish-brown color and dark shoulders near the stem. This is a slicing tomato with a fleshy interior and a rich, slightly earthy flavor. Slices look great next to lighter-colored varieties, and their bold flavor pairs well with olive oil, onions, and stronger cheeses.

The variety has ties to Poland. A grower from Renaissance Farms describes how he received its seeds through the Secret Seed Cartel in France and grew it in 2021. This is a concrete example of the journey a tomato from a Polish collection can take among gardeners in different countries.
