The smell of a tomato

The characteristic aroma of tomatoes comes primarily from volatile aromatic compounds present in the leaves and fruit. In the leaves, this aroma is produced, among other things, by substances secreted by glandular trichomes. The intensity of the fruit’s aroma depends on the variety, degree of ripeness, and growing conditions. It is these aromatic compounds that largely determine the perceived flavor of the tomato.
