Juice density

The density of juice is the ratio of its mass to its volume. It is not the same as viscosity or the perceived consistency of juice or puree, although dry matter content can influence all of these characteristics. The °Bx value indicates the content of soluble substances, not directly the density or viscosity. In processing, the dry matter content and the consistency of the puree are particularly important.
